- cauliflower rice24 oz
- shredded cabbage4 cup
- carrotthinly sliced1/2 lb
- reduced-sodium soy sauce4 tbsp
- garlic cloveminced2 clove
- canola oil4 tsp
- salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Thinly slice the carrot and mince the garlic. Pat the chicken dry; do not rinse it. Season with salt and black pepper. Wash the board, knife, and your hands with soap and water before touching other ingredients.
- 2Heat canola oil in a skillet over medium-high heat. Cook the chicken until browned and the thickest part reads 165°F (74°C), about 5-6 minutes per side. Transfer it to a clean plate and slice.
- 3Cook cabbage, carrot, and garlic until fragrant and crisp-tender, about 3-4 minutes. Add cauliflower rice and soy sauce; cook until hot and tender, about 5-6 minutes. Taste and adjust seasoning, then top with chicken.
