- lean ground beef16 oz
- white rice2 cup
- tomato sauce2 cup
- frozen spinach2 cup
- oniondiced1/2
- red bell pepperdiced1
- balsamic vinegar4 tsp
- dried thyme1 tsp
- cooking oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion and pepper. Pat the ground beef dry, season it with kosher salt and black pepper, and wash your hands after handling it.
- 2Heat the cooking oil in a skillet over medium heat. Add the beef and cook for 6-8 minutes, breaking it apart, until browned and the thickest portion reads 160F (71C) on an instant-read thermometer. Wash the board, knife, and your hands with soap and water before touching anything else.
- 3Add the onion and pepper with a pinch of salt and cook for 4-5 minutes until softened. Stir in the rice, tomato sauce, spinach, thyme, and enough water to cover the rice lightly.
- 4Cover and simmer for 12-15 minutes until the rice is tender and the sauce is reduced. Stir in the balsamic vinegar, taste, and adjust salt and pepper.
