Instructions

  1. 1Thaw and squeeze the spinach dry. Pat the chicken dry, then season both sides with the salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
  2. 2Boil the spaghetti in well-salted water until al dente, tasting 2 minutes before the package time. Reserve a small splash of pasta water, then drain.
  3. 3Heat the oil in a skillet over medium heat. Cook the chicken 5-7 minutes per side, until deeply golden and the thickest part reads 165°F (74°C). Transfer it to a clean plate and wash the board, knife, and hands with soap and water before touching anything else.
  4. 4Add the tomato sauce, spinach, and balsamic vinegar to the skillet. Simmer 3-4 minutes, until hot and slightly reduced. Stir in the pasta and enough reserved water to coat it, then taste and adjust salt and pepper.
