- brown rice1 3/8 cup
- green cabbage2 lb
- yellow onion, sliced3/8 lb
- bell pepper, sliced2
- garlic clove2 clove
- low-sodium chicken broth1 cup
- balsamic vinegar2 tbsp
- taco seasoning1/2 oz
Instructions
- 1Cook the brown rice in water according to the package directions until tender.
- 2Season the pork with taco seasoning, then sear it in a large skillet over medium-high heat until browned and cooked through. Transfer it to a plate and let it rest.
- 3Cook the onion, bell pepper, and garlic in the same skillet until softened.
- 4Add the cabbage and broth, cover, and cook until the cabbage is tender-crisp.
- 5Slice the pork and return it to the skillet. Stir in the balsamic vinegar, then serve the pork and vegetables over the rice.
