  • plain greek yogurt/8 tbsp

  • kosher salt/1 tsp
  • black pepper/1/2 tsp

Instructions

  1. 1Do not rinse the chicken. Pat it dry, then season it with salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
  2. 2Stir the coleslaw mix and Greek yogurt together with a pinch of salt and pepper. Let it stand while the chicken cooks, until the cabbage is slightly softened but still crisp.
  3. 3Heat the oil in a skillet over medium-high heat. Cook the chicken for 5-7 minutes, turning occasionally, until browned and the thickest pieces reach 165°F (74°C) on an instant-read thermometer.
  4. 4Reduce the heat to medium, add the BBQ sauce, and toss for 1-2 minutes until the sauce is glossy and clings to the chicken.
  5. 5Warm the corn in the same skillet for 3-4 minutes, stirring, until hot and lightly browned. Toast the buns cut-side down in the skillet for 1-2 minutes until golden, then fill them with chicken and serve with slaw and corn.
