- black beansdrained and rinsed1 can
- diced tomatoes2 can
- shredded cheddar1 cup
- smoked paprika1 tsp
- chili powder1 tsp
- canola oil4 tsp
- salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Thinly slice the cabbage. Pat the pork dry; do not rinse it. Season the pork with salt, black pepper, smoked paprika, and chili powder. Wash the board, knife, and your hands with soap and water before touching other ingredients.
- 2Heat canola oil in a skillet over medium-high heat. Sear the pork until browned and the thickest piece reaches 145°F (63°C), about 3-4 minutes per side. Transfer it to a clean plate and let it rest at least 3 minutes.
- 3Cook the cabbage until softened and lightly browned, about 4-6 minutes. Add tomatoes and beans; simmer until reduced and hot, about 5-7 minutes. Taste and adjust salt.
- 4Return the pork to the skillet, top with cheddar, and cover until the cheese melts, about 1-2 minutes.
