- corn tortillas12
- onionfinely diced1/3 lb
- frozen corn1 cup
- salsa verde8 tbsp
- cumin1 tsp
- cooking oil4 tsp
- kosher salt1 tsp
- black pepper1/4 tsp
Instructions
- 1Finely dice the onion. Do not rinse the ground beef; keep it separate from ready-to-eat foods and wash the board, knife, and your hands with soap and water after handling it.
- 2Pat the beef dry, then season it with salt, pepper, and cumin before it meets the heat. Heat oil in a skillet over medium-high heat, add the beef and onion, and cook 7-9 minutes, breaking up the meat, until browned and the thickest pieces reach 160F (71C).
- 3Stir in the corn and salsa verde and cook 2-3 minutes, until hot and fragrant. Warm the tortillas in the same skillet for 30-60 seconds per side, until pliable, then fill them.
