- enchilada sauce.trim()2 cup
- red bell pepperdiced2

- shredded mexican cheese.trim()3 oz
- cumin.trim()1/2 tsp
- light olive oil.trim()2 tsp
- kosher salt.trim()1 tsp
- black pepper.trim()1/2 tsp
Instructions
- 1Dice the onion and red pepper. Heat the oil in a skillet over medium heat. Add the onion and pepper with a pinch of salt; cook 4-5 minutes, until softened.
- 2Add the ground beef, cumin, salt, and pepper. Cook 6-8 minutes, breaking it apart, until browned and the beef reaches 160°F (71°C).
- 3Stir in the hominy and enchilada sauce. Simmer 4-5 minutes, until bubbling and reduced slightly. Taste and adjust salt and pepper, top with cheese, and cover 2-3 minutes until melted.
