- tomato sauce8 oz
- mozzarellashredded4 oz
- olive oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Preheat the oven to 400F. Dice the onion and mince the garlic. Halve the red bell pepper and remove the stems and seeds.
- 2Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and garlic with a pinch of the kosher salt, then cook for 3-4 minutes, until translucent and fragrant.
- 3Add the lean ground beef. Break it into small pieces and cook for 6-8 minutes, stirring, until browned and the thickest portion reads 160°F (71°C) on an instant-read thermometer.
- 4Wash the board, knife, and your hands with soap and water before touching anything else. Stir in the frozen spinach and tomato sauce, then taste and adjust with kosher salt and black pepper. Cook for 2-3 minutes, until the filling is hot and the sauce coats the beef.
- 5Place the pepper halves in a baking dish and fill them with the beef mixture. Top with the mozzarella and bake for 15-18 minutes, until the peppers are tender and the cheese is bubbling. The filling should remain at 165F (74C) when reheated through.
- 6Let the peppers stand for 3-4 minutes, then taste the filling and adjust with kosher salt and black pepper before serving.
