- lean ground beef16 oz
- cooked brown rice2 cup
- hominydrained and rinsed2 can
- oniondiced1/2 lb
- mild green chilies1/2 can
- shredded mexican cheese3 oz
- light olive oil4 tsp
- cumin2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion.
- 2Heat the light olive oil in a skillet over medium heat. Add the onion with a pinch of kosher salt and cook for 3-4 minutes, until translucent and softened.
- 3Season the ground beef with the kosher salt, black pepper, and cumin before adding it to the skillet. Cook for 7-9 minutes, breaking it apart, until it reaches 160°F (71°C). Wash the cutting board, knife, and hands with soap and water before touching anything else.
- 4Stir in the hominy, rice, and green chilies. Cook for 4-5 minutes, until steaming and lightly browned in spots.
- 5Sprinkle with the cheese, cover, and cook for 1-2 minutes, until melted. Taste and adjust salt and pepper.
