- tomato sauce24 oz
- broccoli florets16 oz
- oniondiced1
- red bell pepperdiced1
- grated parmesan2 oz
- cooking oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion and red bell pepper.
- 2Bring a large pot of water to a boil, salt it well, and cook the whole-wheat pasta until al dente, tasting near the package's suggested time. Reserve a small cup of pasta water, then drain.
- 3Heat the cooking oil in a large skillet over medium-high heat. Add the onion and red bell pepper with a pinch of salt and cook for 4-5 minutes, until softened and fragrant.
- 4Add the ground beef, season with kosher salt and black pepper, and cook for 6-8 minutes, breaking it into small pieces, until browned throughout and the thickest pieces read 160°F (71°C) on an instant-read thermometer.
- 5Stir in the tomato sauce and broccoli. Cover and simmer for 5-7 minutes, until the broccoli is crisp-tender and the sauce is bubbling. Taste and adjust with salt and black pepper.
- 6Add the drained pasta and toss with the sauce, loosening it with a splash of reserved pasta water if needed. Cook for 1-2 minutes, until the pasta is glossy and hot. Finish with grated Parmesan and serve.
