- cheddar cheese slicetorn into pieces4 slice

- garlic powder:null1/2 tsp
- cooking oil:null4 tsp
- kosher salt:null1 tsp

Instructions
- 1Dice the bell pepper and onion. Do not rinse the ground beef; season it with salt, pepper, paprika, and garlic powder before it reaches the skillet.
- 2Heat the cooking oil in a skillet over medium heat. Add the beef, onion, and bell pepper and cook for 7-9 minutes, breaking the beef apart, until browned and the beef reaches 160F (71C). Wash the board, knife, and hands with soap and water before handling anything else.
- 3Stir in the corn and crushed tomatoes and simmer for 4-5 minutes, until bubbling and slightly reduced. Taste and adjust with salt and pepper.
- 4Lay the tortilla in the skillet, spoon the filling over it, and top with the cheddar. Fold and cook for 1-2 minutes per side, until the tortilla is lightly golden and the cheese is melted.
