Instructions

  1. 1Dice the bell pepper and onion. Do not rinse the ground beef; season it with salt, pepper, paprika, and garlic powder before it reaches the skillet.
  2. 2Heat the cooking oil in a skillet over medium heat. Add the beef, onion, and bell pepper and cook for 7-9 minutes, breaking the beef apart, until browned and the beef reaches 160F (71C). Wash the board, knife, and hands with soap and water before handling anything else.
  3. 3Stir in the corn and crushed tomatoes and simmer for 4-5 minutes, until bubbling and slightly reduced. Taste and adjust with salt and pepper.
  4. 4Lay the tortilla in the skillet, spoon the filling over it, and top with the cheddar. Fold and cook for 1-2 minutes per side, until the tortilla is lightly golden and the cheese is melted.
