- sweet potatoespeeled and diced1 lb
- oniondiced1/3 lb
- shredded cheddar2 oz
- cooking oil4 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Peel and dice the sweet potato and dice the onion. Crack the eggs into a bowl, season them with half the salt and pepper, and whisk until blended.
- 2Heat the oil in a nonstick skillet over medium heat. Add the sweet potato and onion, season with the remaining salt, and cook for 10-12 minutes, stirring occasionally, until the sweet potato is fork-tender and the onion is translucent and softened.
- 3Pour in the eggs and stir gently for 2-3 minutes, until softly set. Sprinkle with the cheddar, cover, and cook for 1-2 minutes, until the cheese melts and the eggs reach 160F (71C).
