Instructions

  1. 1Start rice so it finishes with the stir-fry; rinse and cook according to package directions.
  2. 2Slice chicken and season lightly with salt and pepper; heat oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, then remove and set aside.
  3. 3In the same skillet, add more oil if needed and sauté sliced onion and bell pepper until softened, then add minced garlic and cook briefly.
