Instructions

  1. 1Thinly slice the chicken. Do not rinse it. Wash the board, knife, and your hands with soap and water before touching anything else.
  2. 2Season the chicken with kosher salt and black pepper. Cook it in a skillet over medium heat for 5-7 minutes, turning once, until browned and the thickest piece reaches 165°F (74°C). Transfer it to a clean plate.
  3. 3Boil the pasta in salted water until al dente, starting to taste 2 minutes before the package time. Drain and cool briefly.
  4. 4Whisk the olive oil, apple cider vinegar, oregano, remaining kosher salt, and black pepper in a bowl. Toss with the pasta, tomatoes, olives, parmesan, and chicken. Chill until ready to serve.
