- chicken breastpatted dry and diced16 oz
- long-grain white rice1 cup
- tomato sauce2 cup
- frozen spinach2 cup
- red oniondiced1/2 lb
- paprika1 tsp
- olive oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion and pat the chicken dry without rinsing it. Season the chicken with salt, pepper, and paprika. Wash the board, knife, and hands with soap and water before touching anything else.
- 2Warm the olive oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes, until browned and the thickest piece reads 165°F (74°C) on an instant-read thermometer. Transfer it to a clean plate.
- 3Add the onion and a pinch of salt. Cook for 3-4 minutes until softened. Stir in the rice and tomato sauce with the package-recommended cooking water.
- 4Cover and simmer according to the rice package directions until the rice is tender and the sauce is reduced. Add the spinach and chicken, then cook for 2-3 minutes until hot and the reheated mixture reaches 165°F (74°C) on an instant-read thermometer. Taste and adjust seasoning.
