- white rice1 cup
- green cabbagethinly sliced8 oz
- carrotthinly sliced2
- onionthinly sliced1
- garlic cloveminced4
- balsamic vinegar4 tbsp
- light olive oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Thinly slice the chicken, cabbage, carrot, and onion. Mince the garlic.
- 2Do not rinse the chicken. Pat it dry, season it with salt and pepper, and sear it in the oil over medium-high heat for 4-5 minutes, stirring, until browned and the thickest pieces reach 165°F (74°C). Transfer it to a clean plate. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Cook the rice according to the package directions.
- 4Soften the onion, carrot, garlic, and cabbage in the skillet for 6-8 minutes, stirring, until the cabbage is tender and lightly browned. Stir in the balsamic vinegar and cook for 1-2 minutes, until reduced by half.
- 5Return the chicken and cook for 2-3 minutes, until hot. Serve over the rice and taste for salt, pepper, and acidity.
