- chicken breastpatted dry20 oz
- cooked brown rice16 oz
- coconut milk12 fl oz
- diced tomatoes12 oz
- baby spinach4 cup
- yellow oniondiced1/4 lb
- garlicminced1
- curry powder3 tsp
- canola oil4 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Dice the onion and mince the garlic. Do not rinse the chicken. Pat it dry, season with kosher salt and black pepper, then wash the board, knife and hands with soap and water before touching anything else.
- 2Heat the canola oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes per side, until browned, then transfer it to a plate.
- 3Cook the onion for 3-4 minutes, until translucent and softened. Add the garlic and curry powder and cook for 30-60 seconds, until fragrant.
- 4Add the coconut milk and tomatoes. Return the chicken to the skillet and simmer for 10-14 minutes, turning once, until the thickest part reads 165°F (74°C) on an instant-read thermometer and the sauce coats a spoon.
- 5Stir in the spinach and cook for 1-2 minutes, until wilted. Serve over rice and adjust the salt.
