- chicken thighsdiced20 oz
- lentilsrinsed1 1/3 cup
- diced tomatoes2 can
- spinachchopped3 cup
- oniondiced1
- garlic cloveminced4
- dried thyme1 tsp
- light olive oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the chicken and onion, mince the garlic, and chop the spinach.
- 2Do not rinse the chicken. Pat it dry, season it with salt and pepper, and sear it in the oil over medium-high heat for 4-5 minutes, turning, until browned and the thickest pieces reach 165°F (74°C). Transfer it to a clean plate. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Soften the onion and garlic in the pot for 3-4 minutes, until translucent and fragrant. Stir in the thyme and cook for 30 seconds.
- 4Add the lentils, tomatoes, and enough water to cover them by about an inch. Simmer for 22-28 minutes, until the lentils are tender. Return the chicken and add the spinach. Simmer for 3-4 minutes, until the spinach wilts and the stew is hot. Taste and adjust with salt and pepper.
