- chicken sausagethinly sliced12 oz
- white rice1 1/2 cup
- broccoli florets12 oz
- oniondiced1/2
- grated parmesan2 oz
- cooking oil4 tbsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Thinly slice the chicken sausage and dice the onion. Cut any large broccoli florets into bite-size pieces.
- 2Do not rinse the chicken sausage. Pat it dry, season it with some of the kosher salt and black pepper, and heat the cooking oil in a large skillet over medium heat. Brown the sausage for 4-6 minutes, turning occasionally, until golden and the thickest pieces reach 165°F (74°C). Transfer it to a plate. Wash the board, knife, and your hands with soap and water before touching anything else.
- 3Add the onion to the skillet, season with a pinch of kosher salt, and cook for 3-4 minutes until translucent and softened. Stir in the white rice and toast for 1-2 minutes until fragrant.
- 4Add water according to the rice package directions, scrape up any browned bits, and bring to a simmer. Cover and cook according to the package directions, stirring once, until the rice is tender and the liquid is absorbed.
- 5Stir in the broccoli and return the sausage to the skillet. Cover and cook for 5-7 minutes until the broccoli is crisp-tender, the sausage is steaming hot, and the rice is tender. Taste and adjust with kosher salt and black pepper.
- 6Fold in the grated parmesan and cook for 1-2 minutes until melted and the skillet looks creamy. Taste again and adjust the seasoning before serving.
