- whole wheat spaghetti12 oz
- broccoli florets12 oz
- tomato sauce2 cup
- onionfinely diced1/2
- grated parmesan1 oz
- cooking oil4 tsp
- kosher salt1/2 tsp
- black pepper1/2 tsp
Instructions
- 1Finely dice the onion and thinly slice the chicken sausage. Bring a pot of water to a boil, salt it well, and cook the spaghetti until al dente, adding the broccoli during the last 3-4 minutes. Reserve a little pasta water, then drain.
- 2Warm the oil in a large skillet over medium heat. Add the chicken sausage and cook for 6-8 minutes, turning occasionally, until browned and the thickest pieces read 165°F (74°C). Transfer it to a plate. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Add the onion to the skillet with a pinch of salt and cook for 3-4 minutes, until translucent and softened. Add the tomato sauce and cook for 4-5 minutes, until bubbling gently and slightly reduced.
- 4Return the sausage to the skillet with the drained spaghetti and broccoli. Toss for 2-3 minutes, adding reserved pasta water until the sauce coats everything.
- 5Stir in the parmesan and black pepper. Taste and adjust with salt and a small splash of apple cider vinegar if desired.
