Instructions
- 1Cut the potato into 1/2-inch cubes, dice the red onion, and mince the garlic. Pat the chicken sausage dry if needed, season it with a small pinch of kosher salt and black pepper, and keep it separate from the vegetables.
- 2Heat the olive oil in a large oven-safe skillet over medium heat. Add the potatoes and onion with a pinch of kosher salt, cover, and cook until the potatoes are fork-tender and golden on the cut sides, about 10-12 minutes, stirring occasionally.
- 3Add the broccoli and garlic. Cook uncovered until the broccoli is crisp-tender and the garlic is fragrant, about 4-5 minutes, stirring so the vegetables do not scorch.
- 4Add the chicken sausage and cook until browned and heated through, about 4-5 minutes, with the skillet contents sizzling and the potatoes crisp at the edges.
- 5Scatter the cheddar cheese over the skillet, cover, and cook until the cheese is fully melted, about 1-2 minutes. Taste and adjust with kosher salt and black pepper before serving.
