Instructions

  1. 1Thinly slice the chicken sausage. Heat oil in a skillet over medium heat, add the sausage, and cook 5-7 minutes, turning, until browned and the thickest piece reaches 165°F (74°C).
  2. 2Boil salted water in a pot, add the spaghetti, and cook until al dente, starting to taste 2 minutes before the package time. Reserve a small splash of cooking water, then drain.
  3. 3Add the spinach, tomato sauce, pepper flakes, salt, and pepper to the skillet and cook 4-5 minutes, until hot and the sauce coats a spoon. Toss with the spaghetti and parmesan, loosening with the reserved water if needed; taste and adjust.
