Instructions
- 1Peel and dice the sweet potatoes. Pat the chicken breast dry without rinsing it, then season it on all sides with kosher salt, black pepper, ground cumin, and chili powder. Wash the cutting board, knife, and hands with soap and water before touching anything else.
- 2Heat the light olive oil in an oven-safe skillet over medium heat. Add the sweet potatoes, season lightly with kosher salt, and cook for 8-10 minutes, stirring occasionally, until golden in spots and nearly fork-tender.
- 3Push the sweet potatoes to one side. Add the chicken breast and cook for 4-5 minutes per side, until browned and the thickest part reads 165°F (74°C) on an instant-read thermometer. Transfer the chicken to a clean plate, and wash the board, knife, and hands with soap and water before using them again.
- 4Add the black beans, frozen corn, mild green chilies, and enchilada sauce to the skillet. Stir and simmer for 4-6 minutes, until the sauce is bubbling and the corn is hot.
- 5Cut the cooked chicken into bite-size pieces on the clean board, return it to the skillet, and stir until warmed through. Taste and adjust the salt and pepper, then sprinkle with the shredded mexican cheese.
- 6Bake the skillet at 400F for 8-10 minutes, until the cheese is melted and the edges are bubbling. Let it stand for 3-5 minutes, until the sauce settles and the skillet is warm throughout.
