- quinoarinsed10 oz
- frozen corn8 oz
- green cabbagethinly sliced12 oz
- red onionthinly sliced4 oz
- limejuiced2

- cooking oil4 tbsp
- chili powder1 tsp
- ground cumin1/2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Thinly slice the green cabbage and red onion, mince the garlic, and juice the lime.
- 2Combine the quinoa with water in a saucepan and bring it to a boil. Cover, reduce the heat, and simmer for 15-18 minutes, until the quinoa is tender and its germ has spiraled out. Let it stand covered for 5 minutes, then fluff with a fork.
- 3Pat the shrimp dry. Do not rinse them. Season with kosher salt, black pepper, chili powder, and ground cumin. Wash the board, knife, and your hands with soap and water before touching anything else.
- 4Heat the cooking oil in a large skillet over medium-high heat. Add the red onion and cook for 2-3 minutes, until slightly softened. Add the green cabbage and cook for 3-5 minutes, until crisp-tender.
- 5Add the garlic and frozen corn. Cook for 2-3 minutes, until the garlic is fragrant and the corn is hot. Transfer the vegetables to a bowl.
- 6Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, until pearly and opaque and curled into a C. Remove from the heat.
- 7Divide the quinoa among bowls and top with the cabbage mixture and shrimp. Finish with the lime juice and taste for seasoning.
