- canned chipotle peppers in adobofinely minced1 oz
- limejuiced1
- canola oil8 tsp
- kosher salt1 tsp
- black pepper1/4 tsp
Instructions
- 1Thinly slice the onion and chicken breast, and finely mince the canned chipotle peppers in adobo. Do not rinse the chicken breast. Wash the board, knife, and hands with soap and water before handling the vegetables.
- 2Pat the chicken breast dry, then season it with kosher salt and black pepper.
- 3Heat the canola oil in a skillet over medium-high heat. Cook the chicken and onion for 6-8 minutes, stirring occasionally, until the chicken reaches 165°F (74°C) and the onion is softened. Wash the board, knife, and hands with soap and water before touching anything else.
- 4Stir in the chipotle and half of the lime juice, then cook for 1-2 minutes, until fragrant and lightly reduced.
- 5Warm the corn tortillas in the skillet for 20-30 seconds per side. Fill them with the chicken mixture and cabbage, and finish with the remaining lime juice.
