Coconut Chicken Curry with Spinach and Rice

- coconut milk1 1/3 can
- long-grain white rice1 1/3 cup
- canola oil4 tsp
- curry powder4 tsp
- ground cumin1 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
- lemonjuiced1
Instructions
- 1Thinly slice the onion and mince the garlic. Do not rinse the chicken. Pat it dry, season it with half the kosher salt and black pepper, and wash the board, knife, and hands with soap and water before touching anything else.
- 2Heat the canola oil in a large skillet over medium-high heat. Add the chicken in a single layer and sear for 3-4 minutes, turning occasionally, until lightly browned on the outside; it does not need to be fully cooked yet.
- 3Lower the heat to medium. Add the onion and season with the remaining salt. Cook for 4-5 minutes, until translucent and softened. Add the garlic, curry powder, and cumin and stir for 30-60 seconds, until fragrant.
- 4Stir in the diced tomatoes and coconut milk. Simmer uncovered for 8-10 minutes, stirring occasionally, until the sauce is slightly reduced and the chicken reaches 165°F (74°C) at the thickest piece on an instant-read thermometer.
- 5Stir in the spinach and cook for 2-3 minutes, until wilted and the sauce coats the back of a spoon. Taste and adjust with lemon juice, salt, or pepper.
- 6Cook the rice according to its package directions, salting the cooking water well. Let it stand until tender, then fluff and serve with the curry.
