- cauliflower rice.24 oz
- onionthinly sliced1/2

- baby spinach.4 oz
- coconut milk.12 oz
- extra-virgin olive oil.4 tsp
- curry powder.4 tsp
- apple cider vinegar.4 tsp
- kosher salt.1 tsp
- black pepper.1/2 tsp
Instructions
- 1Thinly slice the onion and red bell pepper. Do not rinse the chicken. Wash the cutting board, knife, and your hands with soap and water before touching anything else.
- 2Pat the chicken thighs dry and season both sides with the salt and black pepper. Heat the oil in a deep skillet over medium heat until shimmering.
- 3Sear the chicken for 4-5 minutes per side, until golden brown and it releases from the pan, then transfer it to a clean plate. It will finish cooking in the sauce.
- 4Add the onion and bell pepper to the skillet and cook for 3-4 minutes, stirring, until translucent and softened. Stir in the curry powder and cook for 30-60 seconds, until fragrant.
- 5Pour in the coconut milk and apple cider vinegar, return the chicken and any accumulated juices to the skillet, and simmer gently for 10-12 minutes, turning once, until the sauce coats the chicken and the thickest part reaches 165°F (74°C).
- 6Stir the spinach into the sauce and cook for 1-2 minutes, until wilted and tender. Taste and adjust the seasoning.
- 7Heat the cauliflower rice in a covered skillet or microwave-safe dish until steaming and crisp-tender, about 4-6 minutes, then serve the chicken and curry over it.
