- low-sodium chicken broth1 cup
- curry powder4 tsp

Instructions
- 1Peel and dice the sweet potato and mince the garlic. Pat the chicken thighs dry without rinsing them, then season all over with the kosher salt, black pepper, paprika, and curry powder. Wash the cutting board, knife, and hands with soap and water before touching anything else.
- 2Warm the olive oil in a large skillet over medium heat until shimmering. Add the chicken thighs and sear for 4-5 minutes per side, until browned and the chicken releases from the pan on its own. Transfer the chicken to a plate; the chicken will finish cooking in the sauce.
- 3Add the sweet potato and garlic to the skillet with a small pinch of the listed salt. Cook for 2-3 minutes, stirring, until fragrant. Add the coconut milk and chicken broth, scrape up the browned bits, and bring to a gentle simmer.
- 4Return the chicken to the skillet, cover, and simmer for 14-18 minutes, turning once, until the sweet potato is fork-tender and the thickest part of the chicken reads 165°F (74°C) on an instant-read thermometer.
- 5Stir in the spinach and lemon juice and cook for 1-2 minutes, until the spinach is wilted and the sauce lightly coats the chicken and vegetables. Taste and adjust with kosher salt, black pepper, and lemon juice.
