Instructions

  1. 1Rinse the rice and lentils separately. Cook the rice according to the package directions while preparing the curry.
  2. 2Warm the oil in a pot over medium heat. Cook the onion, garlic, and carrot until the onion softens.
  3. 3Stir in the curry powder and cumin, then add the lentils, tomatoes, coconut milk, and enough water to cover the lentils generously.
  4. 4Simmer until the lentils and carrots are tender, stirring occasionally and adding water if the mixture becomes too thick.
  5. 5Stir in the spinach until heated through. Season with salt and serve over the rice.
