Instructions
- 1Thinly slice the cabbage and halve the lime. Pat the white fish fillet dry without rinsing it, then season both sides with kosher salt, black pepper, smoked paprika, and ground cumin. Wash the cutting board, knife, and hands with soap and water before touching anything else.
- 2Place the fish on a lightly oiled baking sheet, drizzle with the light olive oil, and bake at 425F for 10-14 minutes, until the thickest part flakes easily and reads 145F (63C) on an instant-read thermometer.
- 3Warm the frozen corn in a skillet over medium heat for 3-5 minutes, stirring, until hot and lightly golden. Taste and adjust with kosher salt and black pepper.
- 4Stir the greek yogurt with lime juice and a pinch of kosher salt. Warm the whole-wheat tortillas in the oven for 2-3 minutes, until flexible and heated through.
- 5Flake the fish into large pieces. Fill the warm tortillas with cabbage, corn, fish, chunky salsa, and lime yogurt. Taste and add more lime juice if needed.
