Instructions

  1. 1Place chicken breasts in the crockpot and drizzle with olive oil, lemon juice and chicken broth; add minced garlic, dried oregano, salt, and pepper and toss to coat.
  2. 2Cover and cook on low until chicken is tender and reaches safe temperature, then remove chicken and shred with two forks.
  3. 3Return shredded chicken to the crockpot and stir to soak up the juices; keep warm on low while preparing broccoli.
  4. 4Steam or sauté the broccoli until crisp-tender and divide onto plates, topping with the shredded lemon-herb chicken and a sprinkle of chopped parsley before serving.
