- low-sodium chicken broth1 cup
- lemon juice4 tbsp
- garlic4 clove
- dried oregano2 tsp
- salt1 tsp
- black pepper1/2 tsp
- fresh parsley (optional)4 tbsp
Instructions
- 1Place chicken breasts in the crockpot and drizzle with olive oil, lemon juice and chicken broth; add minced garlic, dried oregano, salt, and pepper and toss to coat.
- 2Cover and cook on low until chicken is tender and reaches safe temperature, then remove chicken and shred with two forks.
- 3Return shredded chicken to the crockpot and stir to soak up the juices; keep warm on low while preparing broccoli.
- 4Steam or sauté the broccoli until crisp-tender and divide onto plates, topping with the shredded lemon-herb chicken and a sprinkle of chopped parsley before serving.
