  • boneless skinless chicken thigh20 oz
  • canned diced tomatoes2 can
  • zucchini2
  • kalamata olives1 oz
  • garlic2 clove
  • olive oil2 tbsp
  • dried oregano1/2 tsp
  • salt1/2 tsp
  • black pepper1/4 tsp

Instructions

  1. 1Place chicken thighs in the crockpot and season with salt, pepper and oregano.
  2. 2Add canned tomatoes, sliced zucchini, halved olives and minced garlic on top of the chicken and drizzle with olive oil.
  3. 3Cover and cook on low until chicken is tender and cooked through (about 4 hours).
  4. 4Remove chicken and shred if desired, then stir contents to combine and spoon over chicken to serve.
  5. 5Store leftovers in fridge up to 4 days and reheat gently.
