Instructions

  1. 1Finely dice the red onion and mince the garlic. Thaw the spinach and squeeze it dry.
  2. 2Rinse the rice until the water runs mostly clear, then combine it with water in a saucepan. Bring to a boil, cover, reduce to low, and simmer until the grains are tender and the water is absorbed, about 15-20 minutes; fluff and taste for tenderness.
  3. 3Heat the cooking oil in a large skillet over medium heat until shimmering. Add the onion, season with a pinch of the listed salt, and cook for 4-5 minutes, until translucent and softened.
  4. 4Add the garlic, garam masala, and cumin. Stir for 30-60 seconds, until fragrant.
  5. 5Add the chickpeas and spinach, season with the remaining salt and black pepper, and cook for 3-4 minutes, stirring, until hot and the spinach is evenly distributed.
