- chickpeasdrained and rinsed2 can
- frozen spinach: null8 oz
- red onionfinely diced1/2 lb
- garlicminced1
- greek yogurt: null1 cup
- garam masala: null2 tsp
- extra-virgin olive oil: null4 tbsp
- kosher salt: null1 tsp
- black pepper: null1/2 tsp
Instructions
- 1Finely dice the onion and mince the garlic.
- 2Cook the brown rice according to the package directions until tender and the grains are separate. Keep it covered off the heat while preparing the skillet.
- 3Heat the olive oil in a large skillet over medium-low heat. Add the onion with a pinch of kosher salt and cook for 3-4 minutes, until translucent and softened. Add the garlic and garam masala; cook for 30-60 seconds, until fragrant.
- 4Add the chickpeas and frozen spinach. Cook for 6-8 minutes, stirring, until the spinach is hot and the chickpeas are warmed through. Taste and adjust the salt and pepper.
- 5Spoon the rice into bowls, top with the chickpea mixture and Greek yogurt, and serve.
