  • boneless skinless chicken breast, sliced1 1/2 lb
  • whole-wheat pasta1 lb
  • crushed tomatoes1 can
  • mozzarella4 oz
  • parmesan cheese, grated1 oz
  • cooking oil2 tbsp
  • garlic (minced)1

Instructions

  1. 1Bring a pot of salted water to a boil and cook the pasta until tender, then drain it.
  2. 2Warm the oil in a large skillet over medium-high heat. Season the chicken as desired, add it to the skillet, and cook until browned. It is done when the thickest part reads 165°F (74°C) on an instant-read thermometer.
  3. 3Transfer the chicken to a plate. Add the garlic and crushed tomatoes to the skillet and simmer until the sauce thickens slightly.
  4. 4Return the chicken to the skillet and spoon sauce over it. Add the mozzarella and Parmesan, cover briefly, and cook until the cheese melts.
  5. 5Toss the drained pasta with some of the tomato sauce and serve with the cheesy chicken on top.
