- boneless skinless chicken breast, sliced1 1/2 lb
- whole-wheat pasta1 lb
- crushed tomatoes1 can
- mozzarella4 oz
- parmesan cheese, grated1 oz
- cooking oil2 tbsp
- garlic (minced)1
Instructions
- 1Bring a pot of salted water to a boil and cook the pasta until tender, then drain it.
- 2Warm the oil in a large skillet over medium-high heat. Season the chicken as desired, add it to the skillet, and cook until browned. It is done when the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 3Transfer the chicken to a plate. Add the garlic and crushed tomatoes to the skillet and simmer until the sauce thickens slightly.
- 4Return the chicken to the skillet and spoon sauce over it. Add the mozzarella and Parmesan, cover briefly, and cook until the cheese melts.
- 5Toss the drained pasta with some of the tomato sauce and serve with the cheesy chicken on top.
