- Pork tenderloin24 oz
- Yukon Gold potato3 lb
- Green beans4 cup
- Carrot4
- Garlic4 clove
- Olive oil4 tbsp
- Dried rosemary1 tsp
- Paprika2 tsp
- Black pepper1/2 tsp
Instructions
- 1Heat the oven to 425°F and line a sheet pan with foil or parchment.
- 2Cut the potato and carrot into bite-size pieces. Toss them with half the olive oil, rosemary, paprika, and black pepper, then roast until they begin to soften.
- 3Rub the pork with the remaining olive oil, minced garlic, and a little more seasoning. Add it to the pan and roast until the thickest part reaches 145°F (63°C), then rest at least 3 minutes before slicing.
- 4Add the green beans during the final portion of roasting and cook until crisp-tender. Rest the pork briefly, slice it, and serve with the vegetables.
