- boneless skinless chicken breast, sliced20 oz
- whole-wheat pasta12 oz
- mushrooms, sliced8 oz
- crushed tomatoes2 cup
- parmesan cheese, grated1 oz
- garlic (minced)1
- cooking oil4 tsp
- chicken broth1 cup
Instructions
- 1Bring a pot of water to a boil, cook the pasta until tender, and drain it.
- 2Warm the oil in a large skillet over medium-high heat. Cook the chicken until browned, then transfer it to a plate. It is done when the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 3Add the mushrooms to the skillet and cook until softened. Stir in the garlic and cook briefly until fragrant.
- 4Add the crushed tomatoes and chicken broth, scraping up any browned bits. Simmer until the sauce thickens slightly.
- 5Return the chicken to the skillet, add the drained pasta, and toss until coated and hot. Sprinkle with parmesan before serving.
