Instructions

  1. 1Bring a pot of water to a boil, cook the pasta until tender, and drain it.
  2. 2Warm the oil in a large skillet over medium-high heat. Cook the chicken until browned, then transfer it to a plate. It is done when the thickest part reads 165°F (74°C) on an instant-read thermometer.
  3. 3Add the mushrooms to the skillet and cook until softened. Stir in the garlic and cook briefly until fragrant.
  4. 4Add the crushed tomatoes and chicken broth, scraping up any browned bits. Simmer until the sauce thickens slightly.
  5. 5Return the chicken to the skillet, add the drained pasta, and toss until coated and hot. Sprinkle with parmesan before serving.
