- sweet potatocut into 1-inch cubes32 oz
- broccoli florets16 oz
- garlicminced2 clove
- olive oil8 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Heat the oven to 425F. Cut the sweet potato into 1-inch cubes and mince the garlic.
- 2Pat the pork loin dry; do not rinse it. Season all sides with half of the kosher salt and black pepper. Wash the board, knife, and your hands with soap and water before touching anything else.
- 3Toss the sweet potato with half of the olive oil, half of the garlic, and the remaining kosher salt. Spread it on a baking sheet and roast for 15 minutes, until the edges begin to brown and the centers are nearly fork-tender.
- 4Add the broccoli and pork to the baking sheet. Rub the pork and broccoli with the remaining olive oil and garlic, then roast for 12-16 minutes, turning the vegetables once, until the broccoli is crisp-tender and the pork is browned and reaches 145°F (63°C) at the thickest part, then rest at least 3 minutes before slicing.
- 5Transfer the pork to a clean plate and let it rest for at least 3 minutes before slicing. Taste the vegetables and adjust with black pepper and salt if needed.
