Garlic Turkey Tomato Rice Bake

- lean ground turkey20 oz
- brown rice1 cup
- tomato sauce1 can
- fresh spinachroughly chopped4 cup
- yellow oniondiced1/2
- garlicminced2 clove
- parmesan cheesegrated1 oz
- low-sodium chicken broth2 cup
- olive oil4 tsp
- dried rosemary1/2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion, mince the garlic, and roughly chop the spinach. Do not rinse the turkey. Pat it dry if needed, then season it with salt and pepper.
- 2Heat the oil in an oven-safe skillet over medium heat. Add the turkey and cook for 5-7 minutes, breaking it apart, until browned and the thickest piece reads 165°F (74°C). Transfer it to a plate. Wash the skillet, knife, board, and your hands with soap and water before touching anything else.
- 3Lower the heat to medium-low. Add the onion and a pinch of salt, cooking for 3-4 minutes until translucent. Stir in the garlic and rosemary for 30-60 seconds until fragrant.
- 4Stir in the rice, tomato sauce, broth, spinach, cooked turkey, and remaining salt and pepper. Cover the skillet and bake at 375F for 35-45 minutes, until the rice is tender and the casserole is bubbling.
- 5Sprinkle with parmesan and bake uncovered for 3-4 minutes, until the cheese is melted and lightly golden. Taste and adjust the seasoning before serving.
