- cauliflower rice24 oz
- mild green chiliesdrained4 oz
- low-sodium chicken broth1 cup
- yellow oniondiced3/8 lb
- garlic cloveminced2
- fresh cilantrochopped1/2
- canola oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Dice the onion and mince the garlic. Pat the chicken dry without rinsing it, season with salt and pepper, and wash the board, knife, and hands with soap and water before touching anything else.
- 2Heat the oil in a skillet over medium heat. Sear the chicken for 4-5 minutes per side until golden, then add the onion and garlic around it and cook for 2-3 minutes until softened.
- 3Add the broth and green chilies. Cover and simmer for 8-10 minutes until the chicken is tender and the thickest part reaches 165°F (74°C). Transfer the chicken to a clean plate.
- 4Add the cauliflower rice to the skillet and cook for 5-7 minutes, stirring, until hot and crisp-tender. Stir in the cilantro, taste, and adjust the seasoning. Serve with the chicken.
