- fresh spinachroughly chopped4 cup
- mild green chiliesdrained1 can
- shredded cheddar1 cup
- canola oil4 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
- fresh cilantrochopped4 tbsp
Instructions
- 1Roughly chop the spinach and chop the cilantro. Beat the eggs with the salt and pepper.
- 2Warm the canola oil in a nonstick skillet over medium-low heat. Add the spinach and chilies with a small pinch of salt; stir until the spinach is wilted and the chilies are fragrant, about 2-3 minutes.
- 3Pour in the eggs and gently stir until softly set, about 2-3 minutes. Fold in the cheddar and cilantro, then continue until the cheese melts and the eggs reach 160F (71C). Taste and adjust the seasoning.
