Instructions

  1. 1Cook the rice according to the package directions until tender, then keep it covered.
  2. 2Cut the broccoli into florets, thinly slice the carrot, and mince the garlic.
  3. 3Season the ground beef with kosher salt and black pepper. Heat the oil in a large skillet over medium-high heat and cook the beef for 6-8 minutes, breaking it apart, until browned and the thickest pieces read 160°F (71°C) on an instant-read thermometer. Transfer it to a plate, then wash the board, knife, and hands with soap and water before touching anything else.
  4. 4Add the broccoli and carrot with a pinch of kosher salt and stir-fry for 5-7 minutes, until crisp-tender. Add the garlic and cook for 30-60 seconds, until fragrant.
  5. 5Return the beef to the skillet and stir in the honey and rice vinegar. Cook for 1-2 minutes, until glossy and hot. Taste and adjust with kosher salt, black pepper, or vinegar, then serve over rice.
