- chickpeasdrained and rinsed16 oz
- couscous>1 cup
- frozen spinach>8 oz
- tomato sauce>8 tbsp
- greek yogurt>8 tbsp
- garam masala>2 tsp
- garlicminced1 clove
- olive oil>4 tsp
- kosher salt>1 tsp
- black pepper>1/2 tsp
Instructions
- 1Mince the garlic. Place the couscous in a bowl, pour over an equal volume of boiling salted water, cover, and let stand for 5 minutes; fluff when the grains are tender.
- 2Heat olive oil in a skillet over medium heat. Cook the garlic with a pinch of salt for 30-60 seconds, until fragrant.
- 3Add the chickpeas, spinach, tomato sauce, garam masala, salt, and pepper. Cook for 5-7 minutes, stirring, until the spinach is hot and the sauce thickens.
- 4Spoon over couscous and finish with the yogurt.
