Indian Pork Potato Curry

- boneless pork shouldercut into bite-size pieces20 oz
- russet potatopeeled and cubed20 oz
- tomato paste:4 tbsp
- fresh gingerminced5/8 oz
- butter:2 tbsp
- kosher salt:1 1/4 tsp
- black pepper:1/2 tsp
Instructions
- 1Cut the pork and potato and mince the ginger.
- 2Pat the pork dry and season with salt and pepper. Sear it in a Dutch oven or deep skillet until browned, about 4-5 minutes. Wash the board, knife, and hands with soap and water before touching anything else.
- 3Add the butter, ginger, and tomato paste. Stir until fragrant, about 1-2 minutes. Add the potato and enough water to barely cover, then simmer until the potato is fork-tender and the pork reaches 145°F (63°C), then rest at least 3 minutes before slicing.
- 4Rest the pork for at least 3 minutes before serving. Taste the curry and adjust seasoning.
