- frozen green peas8 oz
- spinach6 oz
- garlicminced2
- parmesan cheesegrated2 oz
- olive oil4 tbsp
- italian seasoning2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Cut the broccoli into small florets, slice the chicken sausage, and mince the garlic.
- 2Bring a pot of water to a boil, salt it well, and cook the pasta until al dente, starting to taste two minutes before the package time. Reserve a little pasta water, then drain.
- 3Pat the chicken sausage dry if needed, season it with salt and pepper, and heat the olive oil in a large skillet over medium heat. Brown the sausage for 4-5 minutes, turning occasionally, until golden and the thickest piece reads 165°F (74°C).
- 4Add the broccoli and a small pinch of salt. Cook for 3-4 minutes, until bright green and crisp-tender.
- 5Add the garlic and Italian seasoning. Cook for 30-60 seconds, until fragrant.
- 6Stir in the peas and spinach and cook for 2-3 minutes, until the peas are hot and the spinach is wilted.
- 7Add the drained pasta, Parmesan, and enough reserved pasta water to make a glossy sauce. Toss for 1-2 minutes, until the cheese melts and the sauce coats the pasta. Taste and adjust with salt and pepper.
