- rice.null1 1/4 cup
- diced tomatoes.null2 can
- frozen spinach.null6 oz
- yellow oniondiced1/2
- light olive oil.null2 tbsp
- italian seasoning.null2 tsp
- kosher salt.null1 tsp
- black pepper.null1/2 tsp
Instructions
- 1Finely dice the onion. Do not rinse the chicken. Wash the cutting board, knife and your hands with soap and water before touching anything else.
- 2Pat the chicken dry, then season both sides with some of the kosher salt, black pepper and Italian seasoning.
- 3Heat the light olive oil in a large skillet over medium heat. Add the chicken and sear for 3 to 4 minutes per side, until lightly golden and it releases from the pan, then transfer it to a clean plate. The chicken will finish cooking later.
- 4Add the onion to the skillet with a small pinch of kosher salt. Cook for 3 to 4 minutes, stirring, until translucent and softened.
- 5Stir in the rice and remaining Italian seasoning. Toast for 1 to 2 minutes, stirring, until the rice smells nutty and fragrant.
- 6Add the diced tomatoes and enough water to cook the rice according to the package directions. Stir, nestle the chicken into the rice, cover and simmer according to the rice package directions. Cook until the rice is tender and the chicken reaches 165°F (74°C) at the thickest part, then test the rice for a tender texture.
- 7Stir in the frozen spinach and cook for 3 to 4 minutes, until heated through and wilted. Taste and adjust with kosher salt and black pepper, then serve when the spinach is hot and the skillet is steaming.
