Instructions

  1. 1Cut the potatoes into 1-inch cubes and cut the broccoli into florets. Pat the pork dry without rinsing it. Season the pork on all sides with kosher salt, black pepper, Italian seasoning, and garlic powder. Wash the cutting board, knife, and hands with soap and water before touching anything else.
  2. 2Heat the oven to 425F. Toss the potatoes with half the butter, a pinch of kosher salt, and black pepper on a baking sheet. Roast for 18-20 minutes, until the edges are golden and the centers are nearly fork-tender.
  3. 3Add the seasoned pork and broccoli to the baking sheet. Dot the broccoli with the remaining butter and roast for 15-18 minutes, turning the broccoli once, until it is crisp-tender and the thickest part of the pork reads 145°F (63°C) on an instant-read thermometer, then rest at least 3 minutes before slicing.
  4. 4Transfer the pork to a cutting board and let it rest for at least 3 minutes before slicing. Taste the potatoes and broccoli and adjust with kosher salt and black pepper.
