  • zucchinihalved lengthwise and sliced2 lb
  • crushed tomatoes2 cup
  • garlic cloveminced4
  • cooking oil8 tsp
  • parmesangrated1 oz
  • salt & black pepper1 tsp

Instructions

  1. 1Halve and slice the zucchini and mince the garlic. Do not rinse the salmon. Pat it dry and season both sides with salt & black pepper, then wash the board, knife, and your hands with soap and water before touching anything else.
  2. 2Heat half the cooking oil in a skillet over medium-high heat. Add the salmon skin-side down if it has skin and cook 4-5 minutes, until the fish releases easily and is deeply golden. Turn and cook 3-4 minutes more, until opaque and flaky throughout; fish is safe at 145°F (63°C) on an instant-read thermometer. Transfer it to a clean plate.
  3. 3Lower the heat to medium and add the remaining cooking oil and zucchini. Cook 4-5 minutes, turning occasionally, until golden and crisp-tender. Add the garlic and cook 30-60 seconds, until fragrant.
  4. 4Stir in the crushed tomatoes and a pinch of salt. Simmer 3-4 minutes, until slightly reduced and coating the zucchini. Taste and adjust with salt & black pepper, top with parmesan, and serve with the salmon.
