  • canned crushed tomatoes2 can
  • zucchini3
  • parmesan cheese1 oz
  • garlic2 clove
  • olive oil2 tbsp
  • dried basil1/2 tsp
  • salt1/2 tsp
  • black pepper1/4 tsp

Instructions

  1. 1Mix ground turkey with a pinch of salt, pepper and half the parmesan and form into small meatballs.
  2. 2Brown meatballs in a skillet with a little olive oil until golden on all sides, then remove and set aside.
  3. 3In the same skillet, sauté minced garlic briefly, add canned tomatoes and dried basil, and return meatballs to simmer until cooked through.
  4. 4Meanwhile slice zucchini into ribbons and sauté quickly in olive oil until just tender; season to taste.
  5. 5Serve meatballs and sauce over the zucchini ribbons and sprinkle remaining parmesan on top.
